What would you do with a

five pound pork roast that someone bought on sale at Costco because it was on extreme sale and they were trying to be frugal but then they ended up not so frugal because they spent money on a five pound pork roast and they've never cooked a five pound pork roast? I'm asking for a friend. Thanks.

I would make the Sweet Pork Salad with Cilantro Ranch Dressing (http://weeatstuff.blogspot.com/2008/06/sweet-pork-salad-with-cilantro-dressing.html) and eat it for days.

Or Shredded BBQ Pork in the crockpot. I love it on rolls.

Or one time I just cooked it like a post roast with potatoes and carrots, beef broth and some dry Lipton Onion Soup Mix.

I would make Polynesian Pork Roast. Because I like sweet pork and it is good and easy and you can eat it over rice, on crusty bread, in tortillas, etc. I always freeze a bunch.

Polynesian Pork Roast
3 to 4 lb pork roast (5 will be fine)
3/4 C pineapple apricot preserves (I use what I have, peach or apricot usually)
1/2 C brown sugar
1 clove garlic, finely minced
1/4 C apple cider vinegar
1/2 C soy sauce
1/4 C molasses
2 C chicken broth (can use bouillon and water)

Put the roast in a crock pot. Mix all other ingredients and pour over roast. Cover and cook on low for 8 hours. Roughly shred when done.if desired.

Cranberry Pork roast for sure. So cheap and easy and good.
